Sweet and Sour

 
 

 

Sweet and sour is a generic term that encompasses many styles of sauce, cuisine and cooking methods.

Here are my favourite recipes.

You can adjust the amount of sugar (sweet) and Rice Wine Vinegar (Sour) you use to suit your taste.

Sweet and Sour Chicken

Sweet and Sour Pork

Sweet and Sour Mince

 


Sweet and Sour Chicken

Ingredients

  • 1/2 Kilo of Chicken Breast
  • Bread Crumbs to coast chicken Breast
  • 1 egg
  • 2 tablespoons milk
  • 2 tablespoons of Peanut oil
  • 1/2 Cup Caster Sugar
  • 1/2 Cup Rice Wine Vinegar
  • 2 tablespoons Soya Sauce
  • 1 tablespoon Plum Sauce
  • 1 tin Pinapple Pieces 227 grams
  • 1 teaspoon Salt
  • 1/2 Cup Water
  • 2 tablesppons Corn Flour
  • 5 drops of red food coloring
  • 1 Capsicum
  • 1 Onion
  • 1 Carrot
  • 1 teaspoon chopped Garlic
  • 1 teaspoon chopped ginger

Preparation

1. Prepare Vegetables

  • Cut Onion and Capsicum into 2 cm cubes
  • Cut the carrot into fries
  • Pour the Rice Wine Vinegar into a large jug/bowl and add the vegetable to the vinegar and marinate for 20 minutes.
  • Scoop the vegetables out into another bowl.

2. Making the Sauce

  • Mix 1/2 Cup cold Water and 2 tablespoons Cornflour together in bowl until no lumps.
  • Add 1/2 Cup Rice Wine Vinegar Marinade to the bowl.
  • Add 1/2 Cup Caster Sugar to the bowl.
  • Add 2 tablespoons Soya Sauce to the bowl.
  • Add 1 Teaspoon salt to the bowl.
  • Add 1 tablespoon Plum Sauce to the bowl.
  • Add 5 drops of food coloring to the bowl. (substitute 2 tablespoons Tomatoe Sauce)
  • Mix well to combine all the ingredients.
  • Add can of Pineapple pieces with juice.
  • Mix again.

3. Cook the vegetables

  • Add 1 tablespoon of peanut oil to Wok/Frying pan and add the garlic and ginger and cook for a 10 second stiring and add the carrots and fry for a minute and then add the onions and and capsicum and fry for another minute.
  • Remove Vegetables from the Wok/Pan.

4. Cook the Chicken Breast

  • Mix the egg and milk in a bowl.
  • Cut the chicken breast int reasonably large pices. Say three portions.
  • Dip the chicken in the egg mixture and then coat with bread crumbs.
  • Fry on medium heat unil brown on all sides, ensuring the breast portions are cooked through.
  • Slice the Chicken portions into strips 2cm wide with a sharp knife.

5. Combine Sauce and Vegetables

  • Boil the sweet and sour sauce until it thickens and becomes a clear red color.
  • Pour thickened Sweet and Sour Sauce over Chicken portions.
  • Serve however you wish. I like sweet and sour mince served on a bed of plain rice.

 

Sweet and Sour Pork

Ingredients

  • 1/2 Kilo of Diced Pork
  • 2 tablespoons of Peanut oil
  • 1 litre of oil for deep frying pork
  • 1/2 Cup Caster Sugar
  • 1/2 Cup Rice Wine Vinegar
  • 2 tablespoons Soya Sauce
  • 1 tablespoon Plum Sauce
  • 1 tin Pinapple Pieces 227 grams
  • 1 teaspoon Salt
  • 1/2 Cup Water
  • 2 tablesppons Corn Flour
  • 5 drops of red food coloring
  • 1 Capsicum
  • 1 Onion
  • 1 Carrot
  • 1 teaspoon chopped Garlic
  • 1 teaspoon chopped ginger

Batter

  • 1/2 Cup Corn Starch for Batter
  • 1/2 cup Plain flour for Batter
  • 1 teaspoon Baking Powder for Batter
  • 1 teaspoon Salt for Batter
  • Water for Batter

 

Preparation

1. Prepare Vegetables

3. Cook the vegetables

  • Add 1 tablespoon of peanut oil to Wok/Frying pan and add the garlic and ginger and cook for a 10 second stiring and add the carrots and fry for a minute and then add the onions and and capsicum and fry for another minute.
  • Remove Vegetables from the Wok/Pan.

4. Cook the Pork

  • Mix the Corn starch, Plain Flour, Baking Powder and salt in a bowl.
  • Slowly add water and wisk until you have a smooth mixture that is about the same consistency of paint.
  • Heat the oil to 170 degrees celcius or to the temperature you normmally deep fry at.
  • Dip the pork pieces in the batter and deeep fry until brown and completely cooked through..
  • Remove and place on absorbent paper to drain the excess oil.

5. Combine Sauce and Vegetables

  • Boil the sweet and until the sauce thickens and becomes a clear red color.
  • Combine the cooked pork peices and thickened Sweet and Sour Sauce.
  • Serve however you wish. I like sweet and sour mince served on a bed of plain rice.

Ingredients

  • 1/2 Kilo of Beef Mince
  • 2 tablespoons of Peanut oil
  • 1/2 Cup Caster Sugar
  • 1/2 Cup Rice Wine Vinegar
  • 2 tablespoons soya Sauce
  • 1 tablespoon Plum Sauce
  • 1 tin Pinapple Pieces 227 grams
  • 1 teaspoon Salt
  • 1/2 Cup Water
  • 2 tablesppons Corn Flour
  • 5 drops of red food coloring
  • 1 Capsicum
  • 1 Onion
  • 1 Carrot
  • 1 teaspoon chopped Garlic
  • 1 teaspoon chopped ginger

  • Remove Vegetables from the Wok/Pan.

4. Cook the Minced Meat

  • Add 1 tablespoon of peanut oil to Wok/Frying pan and add the garlic and ginger and cook for a 10 second stiring and then add the mince meat. Fry unil brown on high heat continually stiring.

5. Mix Everything Together.

  • Add the sauce mix to the browned mince meat, and boil until the sauce thickens and becomes a clear red color.
  • Serve however you wish. I like sweet and sour mince served on a bed of plain rice.
